Swedish Potato Sausage
Swedish Potato Sausage is a dependable main dish featuring plus beef skins, ground lean pork, red potato, preserved from the family cookbook.

Method
- Soak the skins overnight in cold water. Wash skins inside and out under running water. Drain and put in a towel. 2 hours. Peel potatoes and onions. Coarsely chop the onions. Grind the potatoes and mix in as you grind. Mix well. Grind onions and drain if too juicy. Put in skins. Not too full. Leave ends open. Put in cold salted water, weighted down. To cook, drain salted water and put in cold water. Bring to a boil.
- Then cook 1 hour but not too high a flame. 12 skins.

What makes this ours
Aunt Lois told me that this recipe came from Grandma Estella, but that she and Grandpa Arthur shared the cooking duties. He was a fireman and worked every other day. On his days at home, he cooked. Aunt Lois said he enjoyed cooking.
