Seven Minute Frosting
A desserts favorite from the Martell family cookbook, shared by Lee Ann Gansmiller.
Make something worth remembering.
Method
- For 2 - 8 or 9" layers:
- 2 egg whites 1 1/2 cups sugar 1/4 teaspoon cream of tartar OR 1 T light corn syrup 1/3 cup water For 13X9" oblong:
- 1 egg white 3/4 cup sugar 1/8 teaspoon cream of tartar OR 1 1/2 teaspoons light corn syrup 3 T water Place over boiling water and beat with a rotary beater until mixture stands in stiff peaks. Scrape bottom and sides of pan occasionally. Fold in 1 teaspoon (1/2 teaspoon) vanilla.
- Variation: Follow recipe above - except use juice from frozen or fresh strawberries in place of the water.
- David likes this frosting on his birthday cakes. My mixer tends to blow the bumer out, so I didn't make it very often.
