Nana Nilla Ice Cream

Roasted banana ice cream with crushed vanilla wafers and a nostalgic ripple.

Method

Make something worth remembering.

Roast the bananas

  1. Heat the oven to 375°F. Peel and slice the bananas, then place them on a parchment-lined pan.
  2. Sprinkle with sugar if desired. Roast for 12–15 minutes, until soft, lightly browned, and syrupy.
  3. Cool for 5–10 minutes, then mash or blend until smooth. Stir in the lemon juice if using.

Churn

  1. Prepare the Standard Creamy Ice Cream Base and whisk in the cooled banana mixture.
  2. Chill and churn as directed, adding the crushed vanilla wafers during the final 30–60 seconds.

Finish

  1. For a ripple, layer the ice cream with extra wafer crumbs and a light drizzle of honey or sweetened condensed milk before freezing.
