Microwaved Glazed Carrots with Pineapple
A vegetables & sides favorite from the Martell family cookbook, shared by Brigit Kennedy Martell.
Make something worth remembering.
Method
- Put carrots in microwave safe baking dish. Mix reserved juice, brown sugar, and salt.
- Pour over carrots. Cover and cook on high for 5 minutes. Add pineapple to carrots; mix well. Cook covered 10 to 15 minutes on high or until carrots are tender. Stir 3 times during the cooking. Mix cold water and cornstarch until smooth Stir into carrots.
- Cook uncovered for 3 minutes.
