Michele's Awesome Scalloped Corn (Mike's favorite)

Method

Make something worth remembering.

Method

  1. Combine the egg, milk, 2/3 cup of the cracker crumbs, 1/4 teaspoon salt and a dash of pepper. Stir in the corn, onion and pimento; mix well. Turn into a I-quart casserole dish. Toss butter with the remaining crumbs; sprinkle atop the corn mixture. Bake uncovered in a 350°F oven for 1 hour or until knife inserted near center comes out clean. Serves six.
