Mexican Beans and Sausage
A main dishes favorite from the Martell family cookbook, shared by Marie Martell Isbell.
Make something worth remembering.
Method
- The Mexican sausage looks like kielbasa, but is quite spicy and cooks up very differently. We buy it at Krogers here in Memphis. Cook the sausage in a little vegetable oil. Add the beans and the salsa and simmer until the juice from the beans has cooked down a little and thickened. Serve with warmed hard taco shells, soft tortilla shells or tostados. Garnish with shredded cheddar, fresh chopped tomatoes, guacamole and sour cream.
Family note
What makes this ours
I got this recipe from a Mexican lady who was doing a demonstration at Krogers. Vety authentic!
