Method

  1. The Mexican sausage looks like kielbasa, but is quite spicy and cooks up very differently. We buy it at Krogers here in Memphis. Cook the sausage in a little vegetable oil. Add the beans and the salsa and simmer until the juice from the beans has cooked down a little and thickened. Serve with warmed hard taco shells, soft tortilla shells or tostados. Garnish with shredded cheddar, fresh chopped tomatoes, guacamole and sour cream.
