Lemon Ice Box Pie
A desserts favorite from the Martell family cookbook, shared by Elizabeth Ford Isbell.
Make something worth remembering.
Method
- place crackers in a zip lock bag that has been sealed and crush with a rolling pin.
- Place the crumbs in a glass pie plate and add 3 tablespoon sugar and melted butter.
- Mix well until all crumbs are moistened and then press into the bottom and sides of the pie pan. Bake for 3 minutes at 350°F to set the crust. Mix the milk, egg yolks, and the lemon juice in a bowl and mix well with a spoon or fork until creamy and slightly thickened. Pour into the crust. Whip the egg whites to stiff peak and gradually add the sugar. Spread on top of the pie. Place it back in the oven and turn it to broil.
- Cook until slightly browned. Watch carefully, this will only take 2 to 3 minutes, and when it starts to brown, it happens quickly. Remove from oven and place in refrigerator until ready to serve.
