John’s Ice Cream Rules
The small habits that make homemade ice cream creamier, softer, and easier to scoop.
Make something worth remembering.
Mix-ins
- Keep mix-ins cold and add them during the final 30–60 seconds of churning.
Churning
- Stop churning when the ice cream reaches a thick soft-serve consistency. Do not overchurn.
Freezing
- Freeze for 1–2 hours after churning for the best scoopability.
- If frozen overnight, let the container sit at room temperature for 5 minutes before scooping.
Bowl strategy
- Keep freezer bowls deeply frozen. For large sessions, rotate multiple bowls and prepare the bases ahead of time in the refrigerator.
Family note
What makes this ours
The best batches are won before the churn starts: cold bowls, cold bases, and mix-ins ready at the right moment.
