Method

Mix-ins

  1. Keep mix-ins cold and add them during the final 30–60 seconds of churning.

Churning

  1. Stop churning when the ice cream reaches a thick soft-serve consistency. Do not overchurn.

Freezing

  1. Freeze for 1–2 hours after churning for the best scoopability.
  2. If frozen overnight, let the container sit at room temperature for 5 minutes before scooping.

Bowl strategy

  1. Keep freezer bowls deeply frozen. For large sessions, rotate multiple bowls and prepare the bases ahead of time in the refrigerator.
