Fire Crackers
A appetizers & beverages favorite from the Martell family cookbook, shared by Marie Martell Isbell.
Make something worth remembering.
Method
- Preheat oven to 475°F. Arrange crackers in rows on 10 X 15" jellyroll pan (with sides) so that crackers are touching each other. Sprinkle seasoning over crackers, then sprinkle with as many red pepper flakes as you dare. Finally, top evenly with shredded cheese. Place pan on center shelf of oven, close door and turn oven off.
- Leave in oven overnight or at least about 4 hours. Hot oven melts and browns the cheese, producing even coating of crisp brown. Fat from cheese soaks into crackers and puffs them slightly. Leaving them in oven dries them out well so that are super crunchy. Break apart and eat or store.
- They keep well for several weeks sealed in airtight tin, but they never last more than a few days at our house. Tony loves these.
