Chocolate Flake Technique

Turn melted chocolate into crisp, delicate flakes right inside the churn.

Method

Make something worth remembering.

Prepare

  1. Melt the chocolate completely.
  2. Add the neutral oil and salt, then stir until smooth.

Drizzle

  1. During the final 1–2 minutes of churning, slowly drizzle the chocolate into the moving ice cream.
  2. Let the chocolate harden on contact and break into thin flakes before transferring the ice cream to the freezer.
Family note

What makes this ours

A slow drizzle makes thin flakes. Pour too quickly and you will get larger chocolate ribbons and chunks instead.
