Chocolate Flake Technique
Turn melted chocolate into crisp, delicate flakes right inside the churn.
Make something worth remembering.
Prepare
- Melt the chocolate completely.
- Add the neutral oil and salt, then stir until smooth.
Drizzle
- During the final 1–2 minutes of churning, slowly drizzle the chocolate into the moving ice cream.
- Let the chocolate harden on contact and break into thin flakes before transferring the ice cream to the freezer.
Family note
What makes this ours
A slow drizzle makes thin flakes. Pour too quickly and you will get larger chocolate ribbons and chunks instead.
