Sweet Potato Pie

Is this a dessert or a side dish? Who cares? We like it better than pumpkin pie! Marie Martell Isbell

Ingredients

  • 2 sweet potatoes to provide 2 cups cooked sweet potato
  • 4 tablespoons butter
  • 3 eggs, beaten
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon nutmeg, freshly grated if possible
  • 1 tablespoon fresh squeezed lemon juice
  • 1/4 cup bourbon whiskey (whatever you’re currently drinking), optional
  • 1 unbaked pie shell

Instructions

  1. Boil the sweet potatoes until very tender; peel and mash them well.
  2. Mix all of the ingredients together (except for the pie crust). Place the batter in the pie crust.
  3. Place the pie in a preheated 400 degree oven and immediately turn the oven to 325 degrees. Bake for about 45 minutes or until the center of the pie is set.
  4. Serve with whipped cream on top or ice cream on the side. Warm or cold, either is good!
