Swedish Potato Sausage

Aunt Lois told me that this recipe came from Grandma Estella, but that she and Grandpa Arthur shared the cooking duties. He was a fireman and worked every othe rday. On his days at home, he cooked. Aunt Lois said he enjoyed cooking.

Ingredients

  • 1 lb plus beef skins
  • 3 lb Ground lean pork
  • 6 lbs Red potato
  • 1 1/2 – 2 lb onion
  • 3 tbsp salt
  • 1/2 tbsp pepper

Instructions

  1. Soak the skins overnight in cold water
  2. Wash skins inside and out under running water
  3. Drain and put in a towel, 2 hours
  4. Peel potatoes and onions
  5. Coarsely chop the onions
  6. Grind the potatoes and mix in as you grind, mix well
  7. Grind onions and drain if too juicy
  8. Put in skins, not too full, leave ends open
  9. Put in cold salted water, weighted down

To Cook

  1. Drain salted water and put in cold water
  2. Bring to a boil
  3. Cook 1 hour but not too high a flame
