Aunt Lois told me that this recipe came from Grandma Estella, but that she and Grandpa Arthur shared the cooking duties. He was a fireman and worked every othe rday. On his days at home, he cooked. Aunt Lois said he enjoyed cooking.
Ingredients
1 lb plus beef skins
3 lb Ground lean pork
6 lbs Red potato
1 1/2 – 2 lb onion
3 tbsp salt
1/2 tbsp pepper
Instructions
Soak the skins overnight in cold water
Wash skins inside and out under running water
Drain and put in a towel, 2 hours
Peel potatoes and onions
Coarsely chop the onions
Grind the potatoes and mix in as you grind, mix well
