If you plan on coloring the cookies, divide into 3 portions and place in separate bowls. Color two of the portions with red or green food coloring, 4 to 5 drops. Mix the coloring into the dough until the color is smooth and consistent throughout. Chill for at least an hour.
Using a cookie press, place the dough in the tube and squeeze out your favorite shapes onto an ungreased cookie sheet: red wreaths; green trees; white poinsettias?
Bake at 350 degrees for 8 to 10 minutes until just starting to brown. Remove to cooling racks and store in a tightly covered container.
