Seven Minute Frosting

David likes this frosting on his birthday cakes. My mixer tends to blow the burner out so I didn’t make it very often! Lee Ann Gansmiller

Ingredients

  • To make enough frosting for 2 8-9″ layers:
  • 2 egg whites
  • 1 1/2 cups sugar
  • 1/4 teaspoon Cream of Tartar OR 1 tablespoon light corn syrup
  • 1/3 cup water
  • 1 teaspoon vanilla
  • To make enough frosting for 9×13″ pan:
  • 1 egg white
  • 3/4 cup sugar
  • 1/8 teaspoon Cream of Tartar OR 1 1/2 teaspoons of light corn syrup
  • 3 tablespoons of water
  • 1/2 teaspoon of vanilla

Instructions

  1. Place all the ingredients except for the vanilla in a double boiler. Beat with a rotary beater until the mixture stands in stiff peaks. Scrape bottom and sides occasionally.
  2. Fold in vanilla.
  3. Variation: Follow the recipe above, except use the juice from frozen or fresh strawberries in place of the water.
