Scott’s Honey Baked Ham

This is from Top Secret Recipe for the Honey Baked Ham store. Scott Pickens

Ingredients

  • 1 fully cooked shank ham, bone-in, pre-sliced is best. We get spiral sliced.
  • 1 blow torch
  • 1/4 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon paprika
  • Dash ground ginger
  • Dash ground allspice

Instructions

  1. Mix all the spices and sugar in a small bowl.
  2. Lay down a couple of sheets of waxed paper.
  3. Spread the sugar and spice mixture evenly on the waxed paper.
  4. Roll ham in the sugar mixture so that it is well coated.
  5. The FUN part – use the blow torch with a medium-sized flame to caramelize the sugar. Wave the torch with rapid movement so that the sugar bubbles and browns, but does not burn. Spin the plate and torch the entire surface of the ham.
  6. Repeat the coating and caramelizing process until the ham has been well-glazed. You don’t have to keep repeating to use all of the sugar.
  7. Serve cold or reheated.
