Pimento Cheese

Ingredients

  • 10 to 11 ounces Velveeta, approximately
  • 1 – 4 ounce jar diced pimento, drained well
  • 1/4 to 1/2 cup Miracle Whip – don’t use mayo!
  • Sugar – a little less than 1 tablespoon
  • Bread for a sandwich or large Fritos or Wheat Thins for a dip

Instructions

  1. Put the Velveeta in the freezer for maybe 10 minutes to firm it up.  Grate on the large grate side of a box grater.  This is messy, but much easier if the Velveeta is firm.
  2. Place in a medium bowl and add the other three ingredients and stir together.  You will probably use closer to 1/2 cup Miracle Whip.
  3. Chill well in the refrigerator.
  4. Very good in a sandwich with your favorite bread. Great as a dip…whatever!
