Pimento Cheese
The best pimento cheese and the only way I’ll eat celery. I usually mince the pimento smaller than comes in the jar.
Ingredients
1 (12 oz) block of aged sharp cheddar cheese
1/3 cup plus 2 tbsp mayo
4 oz jar diced pimento, drained and rinsed
1/3 cup thinly sliced green onion
1 tbsp whole grain mustard
1/2 tbsp Worcestershire sauce
1/4 tsp cayenne
1/4 tsp fresh ground pepper
Instructions
Grate half of the cheese on the large holes of a box grater; grate remaining half on small holes.
Stir together the rest of the ingredients. Mix in cheese until well blended.
Let stand 15 minutes and serve.
