Pimento Cheese

The best pimento cheese and the only way I’ll eat celery. I usually mince the pimento smaller than comes in the jar.

Ingredients

  • 1 (12 oz) block of aged sharp cheddar cheese
  • 1/3 cup plus 2 tbsp mayo
  • 4 oz jar diced pimento, drained and rinsed
  • 1/3 cup thinly sliced green onion
  • 1 tbsp whole grain mustard
  • 1/2 tbsp Worcestershire sauce
  • 1/4 tsp cayenne
  • 1/4 tsp fresh ground pepper

Instructions

  1. Grate half of the cheese on the large holes of a box grater; grate remaining half on small holes.
  2. Stir together the rest of the ingredients. Mix in cheese until well blended.
  3. Let stand 15 minutes and serve.
