Mom’s Spanish Rice and Slumgullion (Goulash)

See Mom’s recipe card…not much help. As a kid, if Jimmy and David were away at college or not around for dinner, I would flatten the Spanish Rice on my plate and make roads with my fork, eating as I would go. If they were eating with us, I’d eat as fast as I could to help ensure I would get seconds. Slumgullion – the exact same recipe but use elbow macaroni instead of rice.

Ingredients

  • 1 pound ground beef
  • Onion, chopped
  • Bell pepper, chopped
  • Garlic
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 can tomato soup
  • 2 cups precooked rice

Instructions

  1. Sauce the onion, garlic and peppers. Once they start to cook, add the ground beef and brown.
  2. Add the tomato sauce, soup and diced tomatoes.
  3. Cook the rice – we have a rice cooker, cheap and fun – and add the rice until it gets to the ratio you like.
