Michele’s Awesome Scalloped Corn

Ingredients

  • 1 egg, beaten
  • 1 cup milk
  • 1 cup coarsely crushed saltine crackers (approximately 22 crackers)
  • 1 17 ounce can of cream-style corn
  • 1/4 cup onion, finely chopped
  • 3 tbsp pimento, chopped
  • 1 tbsp butter or margarine, melted
  • Salt and pepper

Instructions

  1. Combine the egg, milk, 2/3 cup of the cracker crumbs, 1/4 tsp salt and a dash of pepper
  2. Stir in the corn, onion, pimento; mix well.
  3. Turn into a 1-quart casserole dish
  4. Toss butter with the remaining crumbs; sprinkle atop the corn mixture
  5. Bake uncovered in a 350 degree oven for 1 hour or until knife inserted near center comes out clean
Serves six
