Michele’s Awesome Scalloped Corn
Mike’s Favorite
Ingredients
1 egg, beaten
1 cup milk
1 cup coarsely crushed saltine crackers (approximately 22 crackers)
1 17 ounce can of cream-style corn
1/4 cup onion, finely chopped
3 tbsp pimento, chopped
1 tbsp butter or margarine, melted
Salt and pepper
Instructions
Combine the egg, milk, 2/3 cup of the cracker crumbs, 1/4 tsp salt and a dash of pepper
Stir in the corn, onion, pimento; mix well.
Turn into a 1-quart casserole dish
Toss butter with the remaining crumbs; sprinkle atop the corn mixture
Bake uncovered in a 350 degree oven for 1 hour or until knife inserted near center comes out clean
Serves six
