Meatloaf

My best man Rob and his wonderful wife Stephanie shared a twist to the meatloaf recipe: add 1/4 cup of finely chopped mushrooms. After creating the meatloaf mixture, Stephanie would add the meatloaf to a muffin pan, making individual meat loafs, adding mashed potatoes on top (use Bob Evans mashed potatoes if you want a shot cut), then topping them with shredded cheese. My kids love them…and we miss Rob.

Ingredients

  • 1 pound ground beef
  • 1/4 cup onion, finely chopped
  • 2 eggs, beaten
  • 1 cup bread crumbs
  • 1 teaspoon Italian seasoning
  • 1/2 cup ketchup
  • 1/2 cup milk
  • 1/4 cup ketchup for the topping

Instructions

  1. Heat the oven to 350 degrees.
  2. In a large bowl, mix the meatloaf ingredients together well. Press the mixture into an ungreased 8×4″ loaf pan. Bake for 40 minutes.
  3. Remove from the oven, spread 1/4 cup ketchup evenly over the top. Bake an additional 15 to 20 minutes or until a meat thermometer inserted in the center of the loaf reads 160 degrees F. Let stand 10 minutes before serving.
