Holiday Mashed Potatoes

Ingredients

  • 12 medium potatoes, cooked and hot
  • 8 ounces cream cheese, softened
  • 1/4 cup butter
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 eggs lightly beaten
  • 1/4 cup finely chopped onion
  • 1 tsp salt
  • Dash pepper

Instructions

  1. Mash potatoes
  2. When all lumps have been removed, add cream cheese in small pieces then add butter
  3. Beat well
  4. Mix in sour cream
  5. Add eggs and onion to milk
  6. Add to potatoes with salt and pepper
  7. Grease a 9″ casserole dish and refrigerate overnight or freeze
  8. Bake in a 350 degree oven for about 45 minutes
8 to 12 servings
