Grandma Frederick’s Homemade Chicken Noodle Soup

Ingredients
1 Chicken
3 Eggs, beaten
1 tsp salt
2 cups flour, approximately
Instructions
Noodles
Using a fork, mix the eggs, salt, and flour until a soft dough is formed.
So that the dough won’t be too stiff, try adding the flour 1/2 cup at a time until the correct consistency is reached: soft and sticky dough.
Turn out onto a well floured surface and knead more flour into the dough until it is no longer sticky and is smooth and firm to the touch.
Roll it very thin on a well floured surface.
Let it air dry for about 1 hour
Using a knife or a pastry cutter, cut the dough into very thin slices.
Sprinkle with flour as you go to keep the dough from sticking to the counter and one another
Let the noodles air dry for several hours, stirring several times so that they all dry evenly.
Soup
Meanwhile, rinse and clean the chicken
Place the chicken in a large pot and fill with water
Bring to a boil and skim off all the scum
Add salt and pepper, cover and simmer for about 2 hours.
Remove all of the chicken and debone it.
Taste the broth and adjust the seasoning.
Place the chicken back in the pot and add the noodles and flour slowly to maintain a boil.
Simmer for 5 to 10 minutes and serve
