Glazed Almonds

Variations: For orange glazed almonds, add two tablespoons grated orange peel at the beginning of cooking. For glazed spiced almonds, add 1/4 teaspoon of cinnamon at the beginning of cooking. For glazed rose almonds, sprinkle the nuts with 2 teaspoons of rose water and stir well at the end of cooking.

Ingredients

  • 1/2 cup water
  • 1 cup sugar
  • 2 cups raw almonds

Instructions

  1. In a heavy 2 quart skillet, combine water and sugar. Place over a high heat and stir with a wooden spoon until it comes to a boil. Add almonds and stir continuously.
  2. Reduce heat to medium and stir almonds until mixture forms and turns into sugar.  Continue to stir as sugar remelts and caramelizes on the almonds.
  3. Remove from the heat and turn out onto ungreased baking sheets.
  4. Separate nuts using a fork and cool.
