Corn Bread

If making the corn bread for the Cornbread Dressing recipe, this will make enough for the dressing. Anthony F. Isbell

Ingredients

  • 1 cup yellow corn meal
  • 1 cup all-purpose flour
  • 1/4 cup sugar, optional
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup vegetable oil

Instructions

  1. Combine corn meal, flour, sugar, baking powder and salt.
  2. Add milk, egg and oil.
  3. Beat by hand until fairly smooth, about 1 minute.
  4. Grease an 8″ square baking pan or a cast iron skillet.
  5. This is an optional step: if using the cast iron skillet, put 1 tablespoon of bacon grease in the skillet and put it in the oven while it is preheating.
  6. Pour the batter into the pan or skillet and bake in a preheated 425 degree oven for 20 to 25 minutes.
  7. Cool and turn out of the pan or skillet.
