If making the corn bread for the Cornbread Dressing recipe, this will make enough for the dressing.

Ingredients
1 cup yellow corn meal
1 cup all-purpose flour
1/4 cup sugar, optional
4 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/4 cup vegetable oil
Instructions
Combine corn meal, flour, sugar, baking powder and salt.
Add milk, egg and oil.
Beat by hand until fairly smooth, about 1 minute.
Grease an 8″ square baking pan or a cast iron skillet.
This is an optional step: if using the cast iron skillet, put 1 tablespoon of bacon grease in the skillet and put it in the oven while it is preheating.
Pour the batter into the pan or skillet and bake in a preheated 425 degree oven for 20 to 25 minutes.
