Chicken and Rice Casserole
This is a wonderful dish that we have made many times! Would go well with a favorite side or a fresh lettuce salad. Elizabeth Ford Isbell
Ingredients
5 chicken breasts, baked or boiled OR 1# or so of Costco rotisserie chicken
1 cup uncooked Minute Rice
1 and 1/2 cups chicken broth
1 small container sour cream
2 cans Cream of Chicken soup, undiluted
Black pepper
1 and 1/2 tubes Ritz crackers
1 stick butter, softened
Instructions
Pull the cooked chicken into chunks.
Cook the rice in the broth following the directions on the box of Minute Rice.
Mix the chicken with the rice, sour cream, soup and pepper. Pour into an 8×12 pan.
Crush the Ritz crackers and mix with the softened butter. Sprinkle on top of the casserole.
Bake at 350 degrees for 30 minutes.
