Chi-Chi’s Nachos Grande

I worked for 5 years at Chi-Chi’s during high school and the first couple of years of college. I was a trainer of new employees and one of the major incentives was that I got a free meal every shift I was scheduled to work. This appetizer is one that I still miss and crave. The kids and I make this from time to time.

Ingredients

  • 1/2 pound ground beef
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried minced onion
  • 1/8 teaspoon paprika
  • 2 tablespoons water
  • Package of pre-made flat Tostada shells
  • 1/2 cup refried beans
  • 1 to 2 cups Mexican Cheese blend, shredded
  • Jalapeno pepper slices
  • Sour cream and salsa

Instructions

  1. Preheat the oven to 375 degrees.
  2. Brown the ground beef and drain fat.
  3. Add chili powder, salt, dried onion, paprika and water; simmer for about 10 minutes.
  4. Heat the refried beans.
  5. Arrange tostados on a baking sheet. Spread a small layer of the beans on each tostada, then sprinkle the ground beef on the beans, making a flat surface. Pile on a small mound of cheese. Place a jalapeƱo slice on top.
  6. Bake 8 to 10 minutes or until cheese has melted.
  7. Serve with sour cream and salsa.
