Bull’s Eye

I made this to get my twins to eat a good breakfast. Peggy Metcalf Pickens I make this, too, but we call it “Toad in a Hole”. After cooking the toast and the circle of toast on both sides, the circle of toast is placed over the egg to “hide” the toad. Marie Martell Isbell

Ingredients

  • 1 slice of bread
  • Softened butter
  • 1 egg

Instructions

  1. Press a cup into a slice of bread to cut away the center of the bread.
  2. Butter both sides of the bread and the bread circle. Place both in a frying pan. Put a pat of butter in the center of the slice of bread and crack an egg into the hole.
  3. Fry the egg and toast, flip it over and finish cooking until brown on both sides.
