Broccoli Salad

Add more Craisins, cheese and bacon if you like.

Ingredients

  • For Salad:
  • 1 or 2 large bunches if broccoli, finely chopped or pulled into small florets
  • 1/4 cup onion, finely chopped
  • 1/2 cup chopped celery
  • 1/2 cup Craisins
  • 1 cup grated sharp Cheddar
  • 8 slices of bacon, fried and crumbled – leave out if you want to make this vegetarian
  • For dressing:
  • 1 cup Miracle Whip
  • 1/4 cup sugar
  • 2 tablespoons white wine vinegar

Instructions

  1. Cook bacon until crisp; drain and crumble into small pieces.
  2. Chop broccoli, using only the florets and most tender stems. into very fine pieces.
  3. Chop celery and onion.
  4. In a bowl, combine the broccoli, celery, onion, craisins, cheese and bacon.
  5. In a smaller bowl, mix together the dressing ingredients.
  6. Pour the dressing over the salad and toss. Cover and refrigerate for at least an hour.
