Bean Soup for 4

Ingredients

  • 1 cup navy beans
  • 1 1/2 quarts of water
  • 1 ham bone or ham hock
  • 1/2 cup instant mashed potatoes
  • 1 1/2 cup finely chopped onions
  • 3 celery stalks with leaves, finely chopped
  • 1 garlic clove, crushed
  • 1/8 cup parsley, finely chopped
  • salt and pepper

Instructions

  1. Soak beans overnight in water.
  2. Add the ham, cover and simmer till beans start to soften – about 1 hour
  3. Add mashed potatoes and stir until smooth
  4. Add rest of ingredients
  5. Simmer 1 hour
  6. Add water if necessary, but should be very thick
