Bean Soup for 4

Ingredients
1 cup navy beans
1 1/2 quarts of water
1 ham bone or ham hock
1/2 cup instant mashed potatoes
1 1/2 cup finely chopped onions
3 celery stalks with leaves, finely chopped
1 garlic clove, crushed
1/8 cup parsley, finely chopped
salt and pepper
Instructions
Soak beans overnight in water.
Add the ham, cover and simmer till beans start to soften – about 1 hour
Add mashed potatoes and stir until smooth
Add rest of ingredients
Simmer 1 hour
Add water if necessary, but should be very thick
